I don't think you have to either, just walked next door and Mark and I tried
his Cherokee (Jeep) With a voltmeter. Started the engine, battery voltage 13.8
volt, rpm 900 revs, lifted the earth off the battery (negative) volts 14.6 and
the engine kept running, lifted the rpm to 3000 revs volts 14.9 volts.
Reconnected the battery and run the engine for 10 more minutes and stopped it,
resting battery voltage 13.2 volts. The regulator on the alternator should
sense voltage and adjust the field voltage to suit, on an open circuit the
residual magnetism within the iron of the alternator will produce most of the
required voltage. The thing is it is not an open circuit, only the battery is
removed, most of the load is still remaining, including the alternator windings
and the regulator. When the cells of a battery are fully charged and the system
is setup correctly, the battery should appear to have disapeared from the
circuit, plate voltage will make the internal resistance look to be infinite or
an open circuit. This though never realy happens as most batteries never reach
this ideal state of charge, and thus allways load the charging circuit  to some
extent.

Generally, if the engine stops when the earth is lifted from the battery, then
the generator/aternator/regulator is stuffed, or the idle speed is just too
low.
