My palms do not smell garlicky after skinning cloves as I do not press 
hard enough to cause the oils in the clove to present. If I slice off 
one end - it will weep juice (and oils) and smell up the joint.

If I am going to press or smash the clove - as opposed to cooking whole, 
slicing or dicing - I use the flat of a knife or chinese cleaver which 
is much quicker.

      Title: Cinco De Mayo Chicken Salad
 Categories: Salads, Poultry, Citrus, Chilies
      Yield: 4 servings
 
      3 c  Cooked, shredded chicken
    1/3 c  Sour cream
    2/3 c  Mayonnaise
      2 tb Fresh lemon or lime juice
    1/2 ts Ground cumin
    1/2 ts Salt
    1/4 ts White pepper
      1 ts Tabasco or jalapeño sauce to
           -taste
    1/2 c  Sliced carrot
    1/4 c  Diced red bell pepper
    1/4 c  Finely chopped white onion
      2 sm Ripe Haas avocados; chopped* 
      2 tb Chopped fresh cilantro
 
  In a small bowl, stir together the sour cream, mayonnaise, lemon or
  lime juice, cumin, salt, white pepper and tabasco. This mixture is
  the salad dressing, so taste it and adjust the seasonings, if
  desired. In a separate bowl, combine the chicken, carrots, red bell
  pepper, onion, avocado and cilantro.
  
  Pour the dressing over the chicken and vegetables and mix well. Chill
  for at least 1 hour before serving.

  * I've made this when I didn't have avocado handy. It's still
  excellent - just different.
  
  Makes about 4 servings.
