I am encouraging this!

Despite all our marketing talk I have stressed good value for a fair
price and pride in quality, and not the evil side of corporate bean
counter mentality marketing.
   
The next batch of recipes has no theme; they are just interesting
things culled from the interweb and other mail lists.

Apparently mchicha is an indigenous green; spinach is close.

My Nigerian buddies in college did spinach with a thin tomato sauce
and a sprinkle of peanuts. The students from Ghana added chilies;
when I started making it I added garlic too. But not curry powder or
coconut. That must be an east African thing.
                               
MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Mchicha - African Spinach
 Categories: African, Vegetables
      Yield: 4 servings

    Spinach enough for 4-6
      1    Sliced onion
      1    Sliced tomato
      5 g  (1 tsp) curry powder
     50 g  Ghee
      1    Coconut

  Clean and wash the spinach cook it in the minimum of water and
  drain carefully. Fry the onion, Tomato and curry powder in the
  ghee Add the cooked spinach and the thick milk from the grated
  coconut. Cook for 15 minutes over a low heat, This spinach goes
  well with fried fish and coconut rice.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Mchicha (Spinach, Coconut, And Peanuts)
 Categories: African, Vegetables
      Yield: 8 servings

      4 tb Butter
      2 pk (12 ounces each) frozen
    Chopped spinach, thawed
    1/2 c  Coconut, grated
    1/2 c  Peanuts, finely chopped

  In a 2-quart saucepan, melt the butter and add the 2 packages of
  thawed spinach, grated coconut, and chopped peanuts. Toss lightly
  until the ingredients are combined, heated through, and all the
  liquid is absorbed. Add salt and pepper, if desired. Serve as a
  vegetable with any meat, poultry, or fish dish.
