One has, in fact, begun to worry about your relationship
with that stray chook in your backyard. And wonder whether
a chicken can be a vixen.

If that had happened to me, it is an entire possibility that
chicken 'n' dumplin's could have been the supper that night
(should I have braved that kitchen of his).

There's more demand for that water than water; and what you see
pooled in mirrorlike ponds as you cruise 7 miles above is largely
quite brackish and/or quite remote.

Grilled spicy lobsters over corn and sweet potato stew
cat: chichiteaux, celebrity, fusion, shellfish, main
serves: 8

2 c fresh corn kernels
4 lg shallots; minced
1 Tb ginger; minced
3 cl garlic; minced
3 sweet potatoes; peeled and diced 1/2"
2 Tb sesame oil; M says use regular oil

3 c shellfish stock
1 c dry white wine
4 oz mirin; sweetened rice wine
4 oz rice vinegar
1 Tb chili paste
2 c coconut milk
1 Tb coriander seed; toasted and cracked
2 Tb green curry paste
2 Tb coriander leaves; chopped coarse
2 Tb scallions; in rings
2 Tb mint; chopped coarse; M says use basil
2 Tb lime juice

4 lobsters; 2.5 lb each
2 oz sesame oil; M says use regular oil
2 oz chili paste
2 Tb soy sauce; M says omit - add a little white wine instead

Saute first 5 ingredients in oil. Season. Add next 7 ingredients.
Bring to a boil, lower heat, and reduce to 1 qt. Off heat, add
next 5 ingredients and correct seasoning.

Remove lobster claws; blanch and cut through shells to expose meat.

Split lobsters lengthwise.

Mix oil, chili paste, and soy sauce. Season lobsters with this.

Grill, turning constantly and brushing with seasoning, 6 min or
until just done. Serve over corn-sweet potato mixture.
