I would expect that a school such as that would appreciate feedback
from the diners.  At the local Swiss Catering School insists that
students interview diners to get comments and recommendations.

 DS> local hotel management and also to corporate management.   We got no

Perhaps they get them all the time, so don't bother to reply.  What I
was suggesting, though, was something like Dave's critique, wherein
both the good and the bad aspects were included in a balanced report
on the food and the overall restaurant experience, giving praise where
it was due as well as brick-bats.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: (SBS) Green Mango Salad
 Categories: Australian, Salads, Fruit, Shrimp
      Yield: 2 servings
 
      1    Green mango, preferably nam
           Doc mai
      5    Red shallots
      1 tb Dried shrimp
           Ground dried chilli to
           Taste
           Thai fish sauce, to taste
      1 ts Sugar
      1    Stem fresh coriander
      2    Lettuce leaves
 
  Peel and slice the mango into julienne (matchstick) strips. Peel and
  slice the shallots into julienne strips. Pound dried shrimp in a
  mortar and pestle. Mix the above ingredients with the mango and
  season with chilli, fish sauce and sugar. Mix well, serve on a bed of
  lettuce garnished with coriander.
