I've read that the truly original meaning was a farmer or labourer who
literally got a red (sunburned) neck. So it meant hard-working, salt of
the earth. Later it came to mean poorly educated and bigoted. And yes
now it has become the equivalent of good old boy thanks to Jeff
Foxworthy.

This recipe could easily be converted to vegetarian...

     Title: David Burke's Wild Mushroom Risotto
Categories: Wild, Mushrooms, Rice
  Servings: 4

      4 TB Butter
    1/2 lb Assorted wild mushrooms
           (chanterelles, morels,
           shitake,) etc. quartered
      2 TB Olive oil
    1/4 c  minced onion
      1 c  Imported Italian rice, such
           as Arborio
      4 c  Light Chicken Stock or
           canned Chicken Broth
      1 ts Coarse or kosher salt
           Freshly ground pepper

Heat butter in a small sauce pan. Add mushrooms and cook, stirring
occasionally, for 2 minutes. Reserve. Heat olive oil in another
saucepan. Add onion and cook, stirring for 30 seconds. Add rice and
continue cooking for another 30 seconds, or until rice grains are coated
with oil. Gradually add stock or broth, adding more liquid as it is
absorbed by rice and stirring frequently. Continue cooking until all
liquid is absorbed and rice is tender, about 20 to 25 minutes. Fold in
mushrooms and season.
