It was rare to have three wives in the same town but easy enough for a
travelling man.... railway engineer, travelling salesman or once upon a
time.... fur trader.

When I went to school the history books wrote that Samuel Hearne bravely
canoed up the Coppermine River and discovered the Arctic Ocean. When I
moved up here I learned about Matonabee, the Indian guide who took him
there and kept him from getting lost, freezing or starving to death. But
a lesser known figure was Beaulieu the Elder.

Beaulieu was a Metis who routinely *commuted* from Winnipeg to
Coppermine as an independent fur trader. Each round trip took two years
and he wintered on Great Slave lake about 20 miles from Fort Smith. He
spoke nine languages and had nine wives (Chinese, White, Indian and
Inuit) along the route. He had approximately 90 children including my
BIL's great great grandfather. (There are thousands of Beaulieus in
northwestern Canada today.) He took good care of all his wives and
children (he was a prolific traveller with almost superhuman strength
and a very shrewd trader), became a Catholic when he was 99 and then
divorced but kept visiting all but one wife. He died at the age of 101
in his cabin near Fort Smith.

Getting back to Matonabee and Hearne, he drew a map for Matonabee and
sold it to him for the princely sum of $20 in gold. It was extremely
accurate right down to every sand bar and set of rapids with notes on
which side rivers had people, the best fur, the most berries, caribou
herds etc. Matonabee could not have made the trip so easily without the
map.


MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: One-Pot Peppered Winter Stew
 Categories: Venison, Stews
      Yield: 6 servings
 
     25 g  Plain flour
    900 g  Venison; OR
    900 g  -beef, or
    900 g  -Lamb, cut into 4cm cubes
      5 tb Oil
    225 g  Button onions; or
    225 g  shallots, peeled with root
           -end intact
    225 g  Onions; finely chopped
      4    Garlic cloves; crushed
      2 tb Tomato paste
    125 ml Red wine vinegar
    750 ml Red wine
      2 tb Red currant jelly
      1 sm Bunch thyme
      4    Bay leaves
      1 tb Coarse ground black pepper
      6    Cloves
    900 ml Beef stock
    900 g  mixed root vegetables;
           -carrots, parsnips, turnips,
           -celeriac; in 4 cm chunks
           thyme sprigs to garnish
 
  This peppery winter casserole makes a warming meal on a cold day.
  Remember, button onions are much easier to peel if soaked in boiling
  water for a minute or two.
  
  Put the flour into a plastic bag, season with salt and freshly ground
  black pepper then toss the meat in it.
  
  Heat 3 tbsp of the oil in a large deep flameproof casserole and brown
  the meat well in small batches. Remove and put to one side" 3 Heat the
  remaining oil and fry the button onions or shallots for 5 minutes or
  until golden. Add the chopped onion and the garlic and cook, stirring,
  until soft and golden" Add the tomato paste and cook for a further 2
  minutes,then add the vinegar and wine and bring to the boil. Bubble
  for 10 minutes.
  
  Add the red currant jelly, thyme, bay leaves, pepper, cloves and meat
  to the pan and enough stock to barely cover the meat. Bring to the
  boil, cover and cook at 180 C for 1 3/4 to 2 hours or until the meat
  is very tender. .
  
  Serve the stew from the casserole, garnished with the thyme sprigs.
  
  FREEZE Complete the recipe to the end of step 4. Cool quickly and put
  in a freezer proof container. Seal and freeze for up to one month.
  
  TO USE Thaw overnight at cool room temperature. Add an extra 150ml
  stock. Bring to the boil. Cover and reheat stew at 180 C for 30
  minutes.
