Depends on the fish farmer. My old racing buddy, Jerry Inmon, does it 
right. But, then, he practically invented modern US catfish farming. He 
uses concrete tanks, wind driven pumps that move the water in the tanks 
so there is a current. And he has worked out a system that forces the 
fish through a sort of weigh-in-motion scale. If they meet the 
size/weight parameters programmed into the instrument they are gated to 
the next tank/pond and fad a different mixture of kibble. When they are 
market weight the fish are either processed at Inmon Farms or delivered 
"on the hoof" by Inmon Trucking semi-trailers to fish mongers, etc 
throughout the middle of America.

Jerry's fish may get some algae. But, they never, AFAIK, see mud.  Bv)=

Of course, others may just take an old mud pond, stock it with bullhead 
cat, yellowbellies, etc. and seine the results from the still waters. 
That is almost guaranteed to give a muddy tasting result.

At its best and caught in the wild catfish is not the firm fleshed sort 
of fish that I prefer. It's OK for once in a while. But, I druther have 
a nice hunk of solid cod, grilled or pan seared. Or a nice fresh chunk 
of bluefish. Or a number of other things in the fish line.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: (Belarus) Pierniki (Honey Cakes, an Old Dish)
 Categories: Russian, Cakes
      Yield: 32 Servings
 
      6 c  Flour
      1 c  Whey or sour milk
      3    Eggs
     10 tb Sugar
           Poppy seeds
           Butter
           Salt
 
  Sift the flour and stir in the eggs, add the sugar, salt, washed poppy
  seeds, creamed butter and make a dough by gradually adding the whey,
  then set it aside for 20-30 minutes. Roll the dough into a sheet 1-1.5
  cm thick, cut it into rounds and half-moons. Cook the cakes on a
  buttered baking pan. Pour thin honey over the cakes or dust them with
  sugar rubbed together with poppy seeds. The whey may be substituted
  for milk or sour milk.
