New Orleans feels more like a Caribbean city than an US one,
and organization and authority are both rigid and ineffectual. I
see no reason that this will change. Bear in mind that I don't
dislike the place, having on occasion dealt with lawlessness,
rigid authority, and ineffectual organization and not really
minding them all that much, just so alcohol flows relatively
freely and people lie and cheat and steal with relative good
humor. But these conditions obtain only during normal times:
in the pressures after Katrina, the humor and the alcohol
both went absent, with the usual brutal results. I wonder
what would happen if a similarly destructive event befell
Singapore.

As an engineer you probably found a rhythm by which you
helped the refrigerator along during one part of the cycle
and merely stayed put during the other. But try that with
one of our tall heavy fridges full of too much food and
you would be courting disaster.

Stuffed Leg of Lamb New Orleans Style
cat: Easter, main

1/4 lb pancetta or bacon, diced
1/2 c chopped yellow onions
2 1/2 Tb minced garlic
9 fl extra-virgin olive oil
2 c fine dry bread crumbs
3/4 ts salt
1/4 ts freshly ground black pepper
1 pn cayenne
5 Tb minced fresh parsley
4 ts minced fresh oregano
2 lg cooked artichoke hearts, trimmed and diced
1/2 c grated Romano cheese
1 Tb fresh lemon juice
1/2 ts finely grated lemon zest
5 lb boned, butterflied leg of lamb
2 Tb olive oil

Preheat the oven to 400F.

In a large skillet, cook the pancetta until the fat is
rendered and crisp, about 5 min. Remove with a slotted
spoon and drain on paper towels. To the fat remaining
in the pan, add the onions and cook, stirring, 3 min.
Add the garlic and cook, stirring, for 30 sec. Add
3 oz of the olive oil, the bread crumbs and salt and
pepper and cook, stirring, until lightly toasted and
golden brown, about 3 min. Add the parsley and oregano,
stir, and remove from the heat. Spread on a plate to cool.

In a large bowl, combine the cooled breadcrumb mixture
with the cooked pancetta, artichoke hearts, Romano,
1/2 c olive oil, lemon juice, lemon zest, and 1 ts of
the Essence. Stir until well blended. Adjust seasoning
with salt and pepper.

Spread the butterflied leg of lamb, boned side up, on a
work surface with the grain of the meat running left to
right. Spread the bread crumb mixture across the meat,
leaving a 1/2" border on all sides. Roll the meat over
the stuffing, jelly-roll fashion, and tuck in the ends.
Tie with kitchen twine every 2". Rub the remaining olive
oil over the surface of the meat and sprinkle with the
remaining Essence. Place in a heavy roasting pan and
roast until brown and tender, and an instant-read
thermometer registers 140F for medium-rare, about 1 hr.
Remove from the oven and transfer to a cutting board.
Let rest for 15 min before carving. To serve, remove
the kitchen twine and slice.
