Yup. There's already a storage/generating system based on exactly that
principle that uses surplus generation to pump water up to a
high-level reservoir and gravity to drive turbines when demand
requires it.  Just do more of the same.

All of this isn't rocket science, and it's depressing to think that
the obstructions to these sort of sensible, workable solutions are so
trite and selfish. :-(

Paul (who's always been pleased we have an efficient national grid for
electrical distribution and a high-voltage, low waste system at the
delivery end).
