True, but if there's a good sausage recipe in the corporate
archive, and a good provider of pork (perhaps the entire state
of Iowa), one would tend to think that the quality of the one
kind would be similar to that of the other.

Portuguese sausage? Paprika for color and vinegar to preserve.

Egg doesn't count. Egg nasty. For me, two hamburger patties
and an egg. Even better, three patties and no egg.

Dem Hawaiians big kine fellas.

EMBUTIDO
cat: meat, eggs
yield: 1 large loaf

2 lb ground pork
1/2 c fresh bread crumbs soaked in 1/4 c milk
1 chorizo finely chopped (or 4 oz pepperoni)
2 eggs, slightly beaten
1/4 c sweet relish
1/4 ts pepper
1 sm onion finely chopped
2 ts salt
2 Tb raisins
2 hard boiled eggs, quartered
2 Tb softened butter

Thoroughly combine all ingredients except cooked eggs and
softened butter. Preheat oven to 350 F.

Butter the center of a 12 x 18" piece of heavy duty foil.
Spread pork mixture on buttered foil making a rectangle
about 8 x 12". Arrange hard boiled eggs in a row at the
center lengthwise. Roll meat around eggs and wrap with
the foil sealing the edges securely. Bake in a pan for
1 1/2 hr. Let rest for 15 min before unwrapping. Slice
crosswise and serve.
