  You are certainly right about it not being an easy life based on all
  we have heard and seen.  From some of the cooking shows that Gail
  likes to watch, it may well rank up there with the life of a musician
  with regards to the trials and troubles -- but with similar
  satisfaction when one truely loves what they are doing.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Beef Stew    No. 2664
 Categories: Stew, Beef
      Yield: 3 servings
 
      1 tb Olive Oil
      1 sl Bacon, Cut Into 1/2"
           Pieces
  1 1/2 lb Lean Stewing Beef, Cut
           Into 1 1/2" Cubes
      1    Onion, Chopped
      1 tb All Purpose Flour
      1    Clove Garlic, Minced
  1 1/2 c  Beef Stock
    1/2 c  Beer
      1 tb Tomato Paste
      1    Bouquet Garni
      4    Strips Orange Peel
           Coarse Salt
           Pepper, Ground
 
  Heat the oil in a heavy casserole.
  Add the bacon.
  Dry the cubes of beef with paper towels.
  Brown the beef.
  Remove the beef.
  Add the onion.
  Brown lightly.
  Stir in the flour.
  Cook 2 to 3 minutes - don't let the flour burn.
  Return the beef, with its juices, to the casserole.
  Add the garlic, the stock, beer, tomato paste, bouquet garni, orange
  peel, salt and pepper.
  Bring to a boil.
  Lower the heat.
  Simmer gently for 1 1/2 hours, stirring occasionally.
  Remove and discard the bouquet garni.
  Adjust the seasonings.
  Serve warm.
