           Mequite bean flour

  Introductory story: Corn is one of the most highly domesticated
  grains on Earth.  That means that corn has been guided by humans to
  produce in a certain way that is best for humans.  Corn has been
  cultivated by humans in the New World for at least 6000 years. When
  Columbus came to America, there were already 300 different kinds of
  corn being grown. A story is told of why corn and beans are grown
  together. Lonely Corn was looking for a mate. Squash asked to be
  considered, but corn rejected her because of her habit of wandering
  about. Bean clung so closely the stalk that corn chose her, valuing
  her loyalty. The "marriage" of beans and grains is a very happy one
  indeed, for both the land and humans.

  We know that native plants thrive in an area because they have
  adapted to that land.  What about native peoples?  We are just
  beginning to learn about this question.  Recent research, for
  example, has shown us that many of the diseases that are found to
  occur in a high percentage of Native Americans and Hispanics can be
  helped or prevented by a diet in native foods rather than the
  imported, high fat, high calorie fast foods they have learned to eat
  in recent years. For example, both sodas and cactus juice punch make
  sweet, refreshing drinks. But sodas are harmful for people with
  diabetes, obesity, heart problems, and other health problems. Cactus
  juice is actually HELPFUL in those conditions.

  Beans, too, have been shown to be "medicine."  They are rich in
  special kinds of fiber and starch, but low in sugars and fats.  Beans
  have a special kind of gel-forming fiber which help helps the body
  slow down how fast sugar is released into your blood.  The complex
  soluble starches in beans also help "even out" your blood when you
  eat them.

  Another food which is almost magically good for you is mesquite.  Some
  Native American tribes make a traditional "cookie" out of ground
  mesquite bean flour.  The flour is mixed with water, shaped into the
  form of little animals (such as lizards) and left to dry in the sun.
  Then they are stored for eating throughout the year.  A LIZARD FOR
  DESSERT! You notice no sugar was added.  That is because mesquite
  beans are quite sweet with natural sugar; the kind that is best for
  your body.

  The nutritious pea-like pods of the mesquite ripen in September, and
  are eaten by numerous mammals, including humans. The 19th-century
  American botanist C.C. Parry, who is commemorated in the scientific
  names of several important native plants, wrote this about the
  Cahuilla people's use of mesquite: A dual mixture of animal and
  vegetable diet is also secured in the mesquite bean, the pods of
  which are largely occupied with a species of weevil. The whole pod
  and its contents are pounded into a fine powder, only the woody husk
  of the seed being rejected.

  Baking: Native women take a cone-shaped basket of close texture; the
  meal, slightly sprinkled with water, is packed in close layers into
  this; when full it is carefully smoothed off and then buried in the
  sand and exposed to a hot sun. The baking process goes on for several
  hours, till the mass acquires the consistency of a soft brick, when
  it is turned out.

  The solid cake so made is sufficiently palatable, containing a gummy
  sugar which dissolves in the mouth and is unquestionably nutritious.
