  When you're tired of hard-boiled eggs, you can always scramble them
  (at this point in my class, I taught 'em to make omlettes; something I
  can't do via modem, so we'll improvise here ;-)
  
  Eggs, when removed from their shell, do NOT respond well to high heat.
  The rule here, (omlettes are the exception) is to keep the heat LOW,
  and practice the fine art of patience.
  
  To Scramble the Egg
  
  Select a deep saucepan.  Place a 1/2 inch slice of butter or margarine
  in the pan, and place the pan on the stove.  Set the heat for Medium.
  While the butter is melting, break 2-3 eggs into a bowl (depends on
  how hungry you are).  Use a fork to beat the eggs until they are
  BARELY combined (you should still be able to see streaks of white in
  the mixture).
  
  When the butter has melted, pour the eggs into the pan.  Cook,
  stirring occasionally, until the eggs begin to stick to the bottom of
  the pan and thicken.  Immediately pour one "glug" (about 2 Tbsp) of
  milk into the mixture, and stir like crazy.  Continue cooking,
  stirring frequently, until the mixture is set into soft curds.  Add a
  small sliver of butter (about 1/4 inch thick), salt and pepper to
  taste, and continue cooking until the mixture has formed a soft mass.
  Serve as is, over toast, or with any/all of the following additions:
  
  1-2 pickled chile peppers, finely diced A generous handful of grated
  cheese (any kind you like) Crumbled cooked bacon (or bacon bits)
  chopped fresh tomatoes Frozen hash browns, prepared according to
  package directions A handful of minced cooked ham (or part of a can of
  deviled ham) minced fresh herbs minced cooked fish or shrimp cooked
  and crumbled sausage A drained can of mushrooms (reserve the juice
  from the can for other uses)
  
  You may also substitute Sour Cream for the milk called for in the
  recipe (sour cream keeps better than milk, if you're not a milk
  drinker).
  
  For a more substantial meal, try Texas-style breakfast tacos.  Make
  scrambled eggs as above, adding the cheese, cooked hash browns, your
  choice of either cooked sausage or bacon.  Spoon the egg mixture into
  heated flour tortillas (heat 'em in the microwave, or by heating a
  frying pan (DO NOT use a Teflon-coated pan for this, it will release
  poisonous gasses) until quite hot, and flopping a tortilla in the pan.
  Turn almost immediately, then remove from the pan; the tortilla will
  be heated.
  
  3 eggs will make 3-4 generous tacos.  Serve with your favorite
  commercial salsa/hot sauce to spice things up.  Some sliced fruit
  would be good to round out the meal.
  
  For another quick meal, toast bread or English muffins. Also make
  frozen asparagus or broccoli according to package directions.  Keep
  both hot. Make scrambled eggs, adding both cheese and diced ham or
  cooked, crumbled bacon to the mixture.  Place vegetables over the
  toast or muffins, and spoon the eggs over the whole thing.
  
  Sliced fresh tomatoes would round out this meal.  Maybe some fresh
  fruit for dessert.
