   0.25 c  Ghee or walnut oil
   2.00 tb Thawed apple juice
           -concentrate
   0.67 c  Rolled oats
   0.50 c  Oat bran
   0.33 c  Chopped walnuts
   1.00 ts Ground cinnamon
   0.25 ts Freshly grated nutmeg
   0.25 ts Salt

   2.00 tb Quick-cooking tapioca
           -granules
   6.00 c  Peeled, sliced apples (about
           -6 medium)
 
  Note 1: How to make ghee (clarified butter)
  :       Melt butter in a saucepan over low heat. The milk solids will
  :       fall to the bottom, leaving the ghee on top. Pour the ghee
  :       into a jar. Discard the solids. Wrapped tightly in plastic or
  :       sealed in an airtight jar, ghee will keep in the refrigerator
  :       for up to 6 months and in the freezer for up to 1 year.
  
  1. Preheat the oven to 350 degrees. Coat a 9"x9" baking dish with
  cooking spray.
  
  2. To make the topping: In a 2- or 3-quart saucepan, combine the ghee
  and apple juice concentrate. cook over low heat until the ghee is
  melted, 1 to 2 minutes. Remove from the heat and stir in the rolled
  oats, oat bran, walnuts, cinnamon, nutmeg, and salt. (The mixture
  will be dry and crumbly.)
  
  3. To make the fruit: In a large bowl, combine the apple juice
  concentrate and tapioca granules and let soak for 15 minutes. Add the
  apples, stirring to coat.
  
  4. Pour the fruit into the prepared dish and distribute the topping
  evenly over the fruit. Cover loosely with foil and bake for 20
  minutes.. Reduce the heat to 325 degrees and remove the foil. Bake
  for 12 to 15 minutes longer or until the topping is browned.
  
  5. Cool the dish on a rack for 20 to 30 minutes. Serve warm.
