I keep a thermometer in the oven and another in the fridge or freezer.
One of the things we learned the hard way in one of our moves--the
previous owner of a mobile home we were buying before Steve went into
the Army (we sold it before fully owning it when he went in) had left
some unintentional "surprises" for us.  One was that there were no
markings on the oven dial so I guesstimated for a pizza that ended up
being close to charcoal.  I put my own indicators on the dial (may have
ended up buying a new dial, I don't remember) to avoid future disasters
and we got an oven thermometer.  The fridge/freezer one we bought
shortly after buying the $50. "Wonder" fridge several years before.  A
small investment but one that has helped over the various moves and
places we've lived in.

Probably nowhere near the real thing even in your imagination.  We buy
the full fat real thing in cheese becausethe low fat imitaitons are so
bad.  Tried unsalted corn chips but had to go back to the salted ones;
the no salt ones were too flavorless.  Most imitations are poor
imitators of the real thing.

I've had some do a better job than others.  Water temp is a factor too;
found that out when we were in HI; the water heater was set way too low.
We got it moved up a couple of times; once when we first realised the
problem and again, a few years later, on doctor's orders that my hot
water be set high enough (140) to kill any nasties like dust mites when
I wash bedding.

My dad moved into a white collar job--he was the first of his family to
finish high school and graduate from college.  He did/does model
railroad layouts still, not as much as he used to, but a lot of the
buildings are non kit.

There's a science, a well as an art to that.

Yes but they weren't choices we had in the "flavors" available.

I wear a common enough size but finding something that doesn't make my
feet hurt will be more of a challenge now.  I have to have the dress
soes for a few occaisions but most of the time I'm in walking shoes,
sandels (once my foot gets better, almost all the time when we were in
HI) or other foot wear.  My boots are really comfortable but now I've
got to wait a few more weeks before my foot feels good enough to try
wearing them.
