I can imagine the scene, with people at other tables, one after
another noticing what you are doing, pausing, waiting for your head to
explode or your ears to drop off, and then when that didn't happen,
taking a big spoonful themselves, with disastrous results.

I have come across such places, where the good value food encourages
customers to buy their greatly overpriced booze.  Just the place to
take teetotal friends!

I have heard of them.  Sometimes they appear on commercial TV.

I see that, "US wine giant Constellation Brands, owner of the Hardy
Wine Company, has purchased Canada's largest winemaker for $1.8
billion.  Already the world's largest wine group, the deal will ensure
it secures a 4.3% share of the total global market.  Twelve new
wineries and labels, including Western Australia's Goundry Wines and
Amberley Estate, will be added to ... its range of brands."

Also that at last French wine makers, who have previously banned the
non-traditional oak chips and shavings as used by Australian and
American wine makers, have now allowed the practice.

      Title: Garlic, Chilli And Fish Sauce (Nude Cham)
 Categories: Sauces, Vietnamese, Asia-c, Charmaine
      Yield: 1 servings
 
      2    Red chillies
      1    Garlic cloves
      1 ts Sugar
      1    Lemons
      1 tb Vinegar
      1 tb Water
      4 tb Fish sauce
 
  Fish sauce is not just added to cooked foods. Together with sweet and
  sour and hot flavours, it is an important ingredient in d pping
  sauces. This one is a Vietnamese favourite.
  
  Cut off stalks from chillies, split down the centre and remove seeds
  and centre membrane. Cut into pieces, and pound using a mo tar and
  pestle* together with peeled garlic.
  
  Add sugar. Peel lemon, removing all the white pith. Slice and remove
  seeds. Add a small piece at a time to the chillies and pou d to a
  pulp. Stir in the vinegar, water and fish sauce.
  
  Serve in a small bowl and use in small quantities.
  
  * A blender may be used instead of a mortar and pestle, but this
  aerates the sauce.
