I don't do hats or, sunglasses (and use little if any sunblock)
in Arizona in the summer, either.

Strikes me that one could choose well and make the cost
just on the wine. The secret I think would be to go to
the more prestigious wineries first to take advantage of
the offer, then when one went to the others, one could say,
sorry, we've already got our six bottles, but we'd be
happy to buy your stuff at the local bottle shop.

Breaded rabbit legs with apple mayonnaise
cat: main
servings: 6

6 rabbit legs
50 cl red wine
1 cinnamon stick
1 star anise
1 clove
1 orange, zest of
1 Tb peppercorns
6 Tb fine breadcrumbs
3 Tb olive oil
2 eggs
salt
h - For the mayonnaise
1 egg yolk
1 Tb hot mustard
1/2 apple
oil

Cuisses de lapin panees et mayonnaise a la pomme

Combine the meat with wine and the seasonings. 
Salt and cover with aluminum foil. Marinate 2 hr.
Drain and pat dry. Brown on all sides in the oil.

Strain the marinade; bring to the boil; reduce
heat to low and let simmer 1 hr.

Put the crumbs in a flat dish.

Remove the rabbit legs and coat once with the
crumbs. Let cool.

Oven at 210C/410F/th.7.

Line a baking sheet with foil.

Beat the eggs; dip the rabbit legs briefly in
the eggs and then again in the crumbs. Put
on the baking sheet and bake 30 min.

Meanwhile, beat the egg yolk with the mustard.
Drizzle in the oil and beat to make a thick and
firm sauce. Peel and grate the apple fine; fold
it into the mayonnaise. Salt and pepper.

Put the rabbit legs on a serving dish and serve
hot with the sauce.
