      Title: Naireen The Perlow Queen's Sausage Perlow*
 Categories: Pork, Rice
      Yield: 8 servings
 
      2 lb Smoked sausage
    1/2 c  Onion; chopped
    1/4 c  Celery; chopped
      3 tb Sweet bell pepper; chopped
      1 cl Garlic; peeled
      1 cn Stewed tomatoes
      1 cn Water
      1    Fist of thyme (the coarse
           Kind)
      3    Bay leaves
      2    Hot green peppers
           Salt and pepper
      2 c  Rice; white
      4 c  Water
 
  In a good heavy perlow* pot, fry sausage, onions, celery, bell
  pepper and garlic 'til brown. Add tomatoes and the tomato can
  of water. Bring to a boil, add thyme, bay leaves, hot peppers,
  salt and pepper. Cook down for 20 to 25 minutes.
  
  Add rice and water and bring back up to a boil. Put tight lid
  on and simmer for 45 minutes, stirring once about halfway
  through. If it's too soggy take the lid off for a while. If
  it's too dry add a bit more water.
