  Back when we had a dog, we used to get marrow bones from the
  supermarket.   They'd put them out, sliced 1/2 to 1 inch thick, and at
  a price that was less than $1 per pound IIRC.   You are right that if
  they are in the store today, they cost as much as cheap meat.

  Even more ridiculous is our local warehouse store BJs.   They sell
  cryovac portions of boneless pork loin.  These are really nice looking
  pieces of meat, perhaps 20 inches long and 4-5 inches in diameter.
  Price = $1.89 or $1.99 per pound.   Right next to them are "baby-back
  ribs".   It is obvious, and confirmed by the butcher, that these are
  exactly the bones that are cut off of the loin to produce those lovely
  boneless loin portions.   Also 20 inches long.   Price $2.89 per pound
  or more.   I think that the spareribs have more meat on them, and they
  are only about $2 per pound.

  Another example is in our Giant -- boneless skinless breasts = $1.79
  per pound on sale this week.  At the same time, breasts with skin and
  bone still on them = $1.99 in the same store.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Pork-Sweet Potato Stir-Fry
 Categories: Main dish
      Yield: 6 servings
 
  1 1/4 lb Pork tenderloin or lean pork
      2 md Sweet potatoes
      2 tb Oil
    1/2 ts Salt
    1/2 c  Water
  1 1/2 ts Cornstarch
      2 tb White wine
    1/3 c  Green onions, chopped
      2 tb Raisins
      2 c  Thinly sliced apples,
           -do not pare
 
  Cut pork diagonally into slices 1/4 inch thick.  Pare sweet potatoes,
  cut into 1 by 1/2 by 1/8 inch strips.  Stir fry pork (small amounts
  at a time) in hot oil in wok or heavy skillet until pink color
  disappears. Remove; season with salt.  Add sweet potatoes and water,
  cover and cook 5 minutes, stirring occasionally.  Add pork, onions
  and raisins. Combine cornstarch and wine; stir into pork mixture.
  Cook and stir until sauce is thickened. Fold in apple slices.  Serve
  immediately. Makes 6 servings.
