We usually get there between 7am and 8 am and I start up the coals right
away. When they are ready I begin "pre" cooking a bunch of
steaks/chicken/ribs/burgers so I am as ready as I can be. When you have a
line of 50-100 people standing there with a plate in one hand and a beer in
the other....10 minutes IS a long time (grin)! Nobody wants to miss out so
they all stand there crowding eachother and hoping to grab  a couple of
steaks before the grill runs dry and I run out of steaks that aren't cold.

Over the last 30 years I guess I have spoiled them a  bit (grin)! It used
to be that the picnic was burgers only....but we upscaled it a bit each
year.

Most of em will tolerate a rare steak now...but they still want them "WELL
DONE"!!! I do my best to stagger the meat when it hits the grill so I have
some of every level of doneness....but it seldom lasts very long as soon as
people hear "Steaks UP!!" they rush the grill and Every steak is soon gone!
Same for burgers! Chicken and ribs get the same treatment.

While I am still doing a lot of the cooking I am not the "official" head
cook anymore, after all I'm retired! But no matter, if I show up at the
picnic...people demand that I do some cooking...I've had people who
complain that NOBODY can cook a steak as well as I do (which is hard to
believe as half the time I never really get to cook em before they are
grabbed and gone! ). Still a lot of people consider me as the "traditional"
cook and the recognition is certainly flattering!
