Crunchy fried fish skin is usally delicious - and usually brown.
I have seen red snapper skin retain some of its redness, but I
do prefer it when it's done brown all the way.

We had Trader Joe's nova lox bits ($4.99 for 8 oz, as opposed
to $4.99 for 4 oz, which the regular sliced salmon costs) and
were surprised to find when it came out of the package that it
was in fact regular slices. A little mushy, but decent salmon
flavor, not too smoky. This was paired with Tofutti Better Than
Cream Cheese (a compromise for my benefit), which although
somewhat sweet and slightly vanilla-flavored, does a reasonable
job of facsimileing the real thing but without so many of the
unpleasant effects. If there had been, say, oysters on the half
shell available, I would have gone easy on the fish, but as it
was it was a pleasant change from the routine.

Pretty much if you have the proper amount of calories and a
modicum of starch and sugar with your protein and fat, you
survive.

As has been mentioned to me. I'm sure it's selling for more than $38
now. But to tell the truth, I've had wines rated at 95-100 points,
and in general they don't give me more satisfaction than wines rated
anywhere above 85 (though in the 80s most wines are sweet and rather
oligodimensional, this holding for most of the easily available ratings
here - Robert Parker (Wine Advocate), Wine Spectator, Cigar Aficionado,
and so on).

Latin Pork and Hominy Stew

servings: 6

1 lb chorizo, casings removed, sliced
2 red onions, chopped
10 cloves garlic, minced
2 c AVV Syrah
1/4 c olive oil
3 lb pork shoulder, 1" cubed
1 c flour
1 Tb salt
2 Tb ground cumin
1 1/2 Tb coriander
1 Tb fennel seed
1 Tb oregano
49 oz can chicken broth
29 oz can hominy
2 limes, juice of
2 bn green onions, chopped
1 bn cilantro, chopped

In a large ovenproof braising pan saute chorizo for
4 min in oil then remove chorizo from pan. Mix flour
and salt together, toss with pork, making sure to
shake off excess flour. Brown pork on all sides in
the remaining fat, then add onions, garlic, and spices
and continue cooking for 5 min. Next add hominy and
wine, cook for 2 min, then add chicken stock. Cover
bake 2 hr at 350F. Serve over your favorite rice.
