Ärende: hello 110
=================
Hi Michael,

RH> Actually, when you come down to it, what cuisine does translate well
 RH> to a buffet line?

ML> Baked dishes, in addition to what we've mentioned before.
 ML> Lasagne is famous.

Yes, I was thinking in terms of multiple dishes of one ethnic group vs
specific ones. Lasagne is good but it can get too dried out if there's
not enough sauce in it to begin with.

ML> how to keep the taco shells crisp - keep them unfilled and
ML> under a heat lamp hot enough so you almost blister your hand
RH> EY-OUCH! It's one way to do it but it can translate into burns for
RH> the customers, and eventually the place wil get burned in customer fall

ML> You lose the dumb ones, but will the smart ones walk, too?

Depends on if they think the food is good enough to take the risk of
burning themselves. One lawsuit by a burnt customer could make the
owner change his mind on how hot he keeps the bufet line; the food will
loose quality if not kept hot enough and the place will be history.

ML> reaching for anything (I didn't reach for taco shells, but
ML> rather for the chili meat next to it).
 RH> A likely story. (G)

ML> I don't eat much starch at buffets in general, even crispy crunchy
ML> starch. I will eat chili, even mediocre chili, just so it has no
 ML> or minimal beans.

I'll have some as a pasta salad or similar as part of my big plate of
salad starters but it's not a big part thereafter. I generally won't go
for chili; I've had some pretty bad chilis while eating out so would
rather go with things I like.

RH> Yes, but I'm still open to change in some areas of taste.

ML> Sometimes I am kind of nauseated by something I've liked before,
ML> but so far that has always been a temporary reaction. Very seldom
ML> do I try something I dislike and find that it's wonderful after

Most of the time if I don't want something I've enjoyed other times it's
because of underlying health issues. Steve knows I'm really sick if I
refuse any form of chocolate, even the really good or really bad ones.
(G)

ML> all. Though I have evolved ways of making lima beans and even
ML> zucchini palatable, that's not exactly analogous.

Lima beans I still don't like (will eat if I really have to but prefer
not) but I'm coming round to chick peas. Used to not care for them
(first exposure was in college) but having had them in various forms
now, I can eat and enjoy them. Zuchinni is easy for me to like but I
will probably never like peanut butter, coffee or coconut.

RH> They don't grill any more because of the local bear problem

ML> There shouldn't be a bear problem. Bears come in two sizes:
ML> you eat them or they eat you. The way to solve the bear problem
ML> is a few church suppers featuring bear stew.

First you have to spot the bear in an area where it can be safely
killed. Then somebody who can legally kill it (hunter with bear license
or NYSDept./Con officer) has to dispatch it. Then it can be served for
church supper. (G) If not served, everybody will be unbearable. (GD&R)

 ML> Title: Gingerbread Teddy Bears
 ML> Categories: Cookies
 ML> Yield: 24 servings

Cute! Wonder what Robert would think of them.

Catch you later,
Ruth
