Actually it was a one time thing I put together, totally tongue in 
cheek, to celebrate Al Goldstein's birthday. And it took a bit of doing. 
I managed to get stuck on the East Coast (Bordentown, NJ) and arranged 
this trip myself ... two half truckloads. I picked up the first half in 
Blue Ball, PA. The second half loaded in Intercourse, PA. 

I then delivered the first stop (last loaded) to French Lick, IN (home 
of Larry Bird) and finished up in Climax, MI.

      Title: Rock Shrimp Quesadillas W/Cantaloupe, Berry & Peach Salsa

      Yield: 6 servings
 
MMMMM---------------------------SALSA--------------------------------
      2 c  Small diced cantaloupe
      1 pt Fresh blackberries, washed
           And hulled
      2 c  Small diced peaches
      1 c  Small diced red onions
      1 lg Fresh jalapeno; seeded, in
           - small dice
    1/4 c  Loose pack chopped fresh
           - Cilantro leaves
           Salt & Fresh black pepper
      6 tb Fresh lime juice
      1 tb Extra-virgin olive oil

MMMMM------------------------QUESADILLAS-----------------------------
      2 tb Olive oil
      1 c  Chopped yellow onions
           Salt & fresh ground pepper
      1 ts Chopped garlic
      1 lb Rock shrimp
      1 md Avocado; peeled, sm dice
    1/2 c  Scallions; thin sliced on
           - bias
      4 oz Monterey Jack cheese; grated
      4 oz Sharp cheddar cheese; grated
     12 lg Flour tortillas
    1/2 c  Vegetable oil
      1 c  Sour cream
      1 tb Fine chopped fresh parsley
           - leaves
 
  Combine the fruit, onions, jalapeno, and cilantro in a mixing bowl.
  Season with salt and pepper. Add the lime juice and olive oil. Mix
  well. Set aside.

  In a sauté pan, heat the oil over medium heat. Add the onions. Season 
  with salt and pepper. Sauté for 2 minutes.

  Add the garlic and shrimp. Season with salt and pepper. Continue to 
  sauté for 2 to 3 minutes, or until the shrimp turn bright pink. Remove 
  from the heat and cool completely.
  
  In a mixing bowl, combine the shrimp, avocado, scallions and cheese.
  Season with salt and pepper. Mix well. Spoon the mixture evenly over
  half of the tortilla. Fold the remaining half over, forming a
  half-moon shape. Heat a large griddle over medium heat. Lightly brush
  both sides of the tortilla with the oil. When the griddle is hot,
  cook the quesadillas for 2 to 3 minutes on each side or until crispy
  and the cheese is melted.
  
  Remove from the heat and cool slightly. Slice each quesadilla into
  thirds. Serve with the fruit salsa and a dollop of the sour cream.
  Garnish with parsley.
  
  Yield: 6 to 8 servings
