Wait until you get old. I used to be a night owl - preferring the night 
shift, not really getting going until most folks were winding down, etc. 
But I have suddenly (in the last 15 years) flipped my diurnal rythyms 
for some reason. I naturally wake at 0600 or a bit earlier - no matter 
when I crashed. Seldom stay up past midnite any longer. I've become my 
Grampaw revisited. Well, almost. He was generally up at 0400, before 
first sparrow-fart.

      Title: Shrimp Salad Presentation
 Categories: Emeril, Seafood, Salads
      Yield: 2 servings
 
    1/2 lb Large shrimp, peeled,
           - deveined & cooked
      2 tb Mayonnaise
           Juice and chopped zest of 1
           - Lemon
      1 tb Diced red pepper
      1 tb Diced shallots
      1 tb Chopped chives; plus extra
           - for garnish
      1 ts Chopped dill
           Salt & pepper
      2    Cooked artichokes
           Crusty French bread, sliced
 
  Cut shrimp in thirds and toss in a bowl with mayonnaise, lemon juice
  and zest, red pepper, shallots, chives, dill, and salt and pepper to
  taste. Remove leaves and chokes from artichoke bottoms. Center
  bottoms on plates and arrange some of leaves around in a pretty
  design. Fill bottoms with shrimp salad to overflowing. Sprinkle with
  extra chives and serve with bread.
  
  Yield: 2 servings
