The southern USA is more likely to be overrun by something like
a Japanese starch crop.

I had a chuckle at the one Bizarre Foods program that I have had
the pleasure of seeing, in which the host is caught on camera
savoring a bite of (Southern US o-)possum, followed by file footage
of one of your possums. I must say that possum is not one of my
favorite foods.

Large wildlife don't tend to do that well in badlands (there are
not very many badlands in Arizona, in the way that that term is
customarily used; many more in New Mexico, though the most frequent
use of the term is to refer to those in South Dakota), as there's
not much easy roaming in them. Although it might be plausible that
kangaroos could evolve back into giant carnivorous creatures, I
don't see that happening in Arizona in its current form.

Anyhow. Geography lesson time. Southern USA refers to, roughly,
the area between Texas (inclusive or exclusive) and Florida.
Arizona, though south, is in the Southwest (which goes from
Nevada to Texas inclusive). Interestingly, California, the
southwesternmost (though not southernmost nor westernmost) of
the lower 48, is usually not included in the Southwest. Florida,
Georgia, and South Carolina are generally considered "the
Southeast," though this region is most often treated as a subset
of the South.

Arizona's Supreme Citrus Pie

9 in baked deep dish pie crust, cooled
h - Fluffy filling
8 oz package cream cheese, softened
12 oz can sweetened condensed milk
6 oz can frozen lemonade concentrate, thawed
1 pk (4-serving size) lemon-flavor instant pudding mix
- (not sugar free)
1 c whipping cream, whipped
h - Clear filling
1/2 c cornstarch
1/3 c water
4 egg yolks
1/2 c fresh lemon juice
1 1/2 c granulated sugar
1/2 c water
1 Tb butter or margarine
h - Topping
1 c whipping cream
2 Tb confectioners' sugar
3/4 ts vanilla

Fluffy filling:
Combine cream cheese and sweetened condensed milk in large bowl.
Beat at low speed of electric mixer until smooth. Add lemonade
concentrate. Blend well. Beat in pudding mix until smooth. Fold in
whipped cream. Spoon into baked pie crust. Make shallow depression
in filling 1 inch inside of edge. Refrigerate.

Clear filling:
Combine cornstarch and 1/3 c water in small bowl. Stir to blend.
Combine egg yolks and lemon juice in medium bowl. Beat until
smooth. Combine granulated sugar and 1/2 c water in medium
saucepan. Cook on medium heat until mixture comes to a boil.
Stir in cornstarch mixture slowly. Cook and stir until thickened
and clear. Remove from heat. Stir in egg yolk mixture slowly
until blended.

Return to heat. Cook and stir 1 to 2 min or until mixture comes
to a boil. Remove from heat. Stir in butter until blended. Cool
completely. Spread gently over fluffy filling.

Topping:
Beat whipping cream in small bowl at high speed of electric mixer
until stiff peaks form. Beat in confectioners' sugar and vanilla.
Spread over clear filling. Refrigerate until firm.
