It would be interesting to know their reasoning as to how they arrived
at those disparate decisions.

Just because you people insist on showing maps and globes of the world
upside down!   Antarctica should be at the top of the globe, as with
all that continental rock in the Northern Hemisphere that would
obviously be heavier, and fall to the bottom.

It is also a big, empty country with no roads in large areas.
Although I doubt if I would need it, I will enquire around to see what
is available.  Somehow I doubt that Humpty Doo, Rum Jungle or the
Tanami Desert would be included.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Mina Rawson's Pigweed Cheese
 Categories: Side dish, Australian, Cheese
      Yield: 1 Servings
 
    750 g  Pigweed [purslane]
      1 tb Vinegar
    125 g  Cheese ;grated
     40 g  Butter
      1 ts Spice- mustard powder
 
  Wash the pigweed thoroughly & discard any tough stalks. Bring a large
  saucepan of salted water to the boil over a medium heat & drop in the
  pigweed. Boil rapidly until the thickest stalks are tender, about 3
  minutes. Drain well in a colander & let cool a little before chopping
  it up roughly.
  
  Place half the pigweed in a greased gratin or oven-proof dish.
  Sprinkle with half the vinegar & half the cheese. In a small saucepan
  melt the butter & stir in the mustard until smooth. Spoon half of
  this over the cheese in the gratin dish. Repeat the layers finishing
  with the melted butter.
  
  Bake in a preheated oven at 200øC until cooked, about 20 minutes.
