Hi, everyone.

Just a short note about my Thanksgiving dinner...

I got home around 12:15 PM after pulling a 12-hour shift at work.  My
wife, Maura, was busy cooking in the kitchen.  We have a very small
kitchen but it's big enough to do things when you need to.  She had
underestimated the time it would take to make her homemade mashed
potatoes and was busy peeling them when I came home.  She bought a
"Rotato" peeler from Wal-Mart the day before and it worked very nicely,
allowing the peelings to flow directly off the potatoes into the trash
can.

I showered, changed and then put on two pots of boiling water for her.
One was for the potatoes and the other was for the frozen
corn-on-the-cob "niblets" we bought.  She'd already made her homemade
cranberry sauce (which was nicely tart, barely sweetened-just the way I
like it) and gingerbread cake (out of a box, but still good).  Her
mother showed up at around 1:30 PM with a big box of very nice dishes
that were given to us by a mutual friend. So we had something to put the
turkey on.

Speaking of turkey, we'd went to Publix and bought a nice pre-cooked
turkey for about $18.  It fed all three of us and we have /plenty/ of
leftover.  All we did was warm it (according to the directions) to 140
degrees F (well, I pulled it out at 135 dF because we were all starving
:) and man, was it juicy and good!  I also bought myself some ham
because I like ham with my turkey.  The ham was so-so, but hey, I was
cheap and bought cheap ham.  Get what you pay for.

Turkey
Ham
Mashed potatoes (no gravy; Maura doesn't like it)
Stuffing (Pepperidge Farms; very good)
Cranberry sauce
Dinner rolls
Corn-on-the-cob
Pumpkin cheesecake (Cheesecake Factory-very good!)
Gingerbread cake

Needless to say, I had a few helpings and was stuffed until I came to
work today (gobbled down my leftover plate of goodies at 2 AM-very tasty
any time of the day).  I'm looking forward to more leftovers...but I've
two hours left on this shift before I can get some more.

This was Maura's first home-cooked Thanksgiving meal she'd made since
she left home and married me.  We all really liked it and it got my
mother-in-law, Rita, thinking.  It looks like we may have Christmas
dinner up at her place and Maura may help cook.  I'm quite proud of
Maura as preparing anything from scratch in that kitchen is hard since
it's so small, but she made a large meal and did a terrific job with it.

I have to admit, I'm kinda spoiled at times with her cooking, but she is
expecting me to cook more often now. <G>  I do want to do more cooking,
but normally I'm so tired that I don't do it.  Maybe after I get off of
nights I'll cook more often.

Oh, a footnote: after dinner, Maura and Rita went to the movies to see
"Enchanted" while I cleaned up, put the food away and tried to tidy as
much as I could in my semi-sentient state.  I then passed out on the
couch and slept. After sleeping about seven hours, I turned right back
around and came to work.

I hope all of your Thanksgiving celebrations (for those who observe it)
were as wonderful as mine.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Possum Pie
 Categories: Desserts, Low-fat, Pies, Chocolate, Pudding
      Yield: 8 Servings

      6 oz Cream cheese -- softened
    3/4 c  Powdered sugar
      9    Inch purchased graham
           -cracker crust
    1/4 c  Pecans -- chopped
    1/3 c  Instant chocolate pudding
           Mix
    1/4 c  Instant vanilla pudding mix
      2 c  Cold milk
    3/4 ts Vanilla
    1/2 c  Whipping cream -- whipped or
  1 1/2 c  Cool Whip
           Pecan halves -- for garnish

  Beat cream cheese and sugar until smooth.  Spread onto bottom of
  crust. Sprinkle with chopped pacans.  Combine pudding mixes.  Add
  milk and vanilla. Beat on low speed for 2 minutes. Spoon over the
  nuts. Chill for at least 2 hours. Top with whipped cream and pecan
  halves.
