      Title: Smoked Trout, Asian Pear & Horseradish Cream Crostini
 Categories: Seafood, Breads, Fruit
      Yield: 36 servings
 
      1 c  Heavy cream
    1/4 ts Sugar
      1 tb Prepared horseradish
      1 tb Chopped toasted pecans
      1 ts Lemon zest
    1/4 ts Minced garlic
    1/2 ts Apple cider vinegar
           Salt & fresh ground pepper
      1    Asian pear; peeled, cored,
           - sliced thin
      1    Lemon; juiced
      5 oz Smoked trout
      1 tb Minced tarragon
     36    Toasted slices of baguette
 
  A creamy spread spiked with horseradish and pecans gives a pleasant
  kick to this crostini.
  
  Whip the heavy cream with the sugar in a mixer to firm peaks. Fold in
  the horseradish, pecans, lemon zest, garlic and apple cider vinegar.
  Season to taste with salt and pepper.
  
  Place Asian pear slices in a small bowl and toss with the lemon juice
  to keep them from browning.
  
  Flake trout into a small bowl and set aside.
  
  Spread the horseradish-pecan cream in a thin layer on each crostini.
  Top with a slice of the Asian pear and a small amount of the flaked
  smoked trout. Garnish with tarragon and sprinkle with more fresh
  ground pepper, if desired.
  
  Repeat with the rest of the crostini and topping ingredients.
  
  Makes 3 dozen crostini.
