-=> Quoting Glen Jamieson to Carol Shenkenberger <=-

GJ> Yesterday I tried something new. As my son had inadvertently bought
GJ> some separatist long-grain rice during my last extended absence from
CS> (hehe my term is catching on)

 GJ> It is very descriptive.

Hehe and a useful way to describe grain cooking differnces

GJ> boiling. The experiment was partly successful, as the grains did
GJ> become friendlier, and certainly the coconut flavour was an
GJ> improvement, although still not as good as Calrose medium grain.

CS> I wonder if this could be a route to a 'congee' like thing? If so,
CS> add twice the water then adjust the coconut powder to taste. You do
 CS> not after all 'have'
CS> to make such with chicken stock or dashi. You could perhaps match
CS> your more normal to you indonesian style seasonings with it and the
CS> coconut and get a winner new thing?

GJ> I suppose doubling the water in the rice cooker would keep it boiling
GJ> a lot longer, and maybe soften the hearts of the long grains.

But not enough to make them love one another, just make them friendly.

Still, seems a path worth exploring. I might try it here.

CS> I am stubborn and dont want to give up space to a wok.

GJ> I have a pile of frying pans, woks and kawalis of various shapes and
GJ> sizes in the cupboard, but as they do take up space on the stove, and
GJ> overlap the other elements, I only use one at a time. Usually the
GJ> smaller of my two cast aluminium kawalis.

My 3 cast iron ones suit almost all needs. They are very useful on a gas range
as other pans are not as useful there.

GJ> Are the other kids also "military brats", who had been living with

(on kids versions of South Africa posting)
CS> I dont really know but if i can get away with a guess? They only
CS> recently did away with apartheid and I bet alot of hidden such is
CS> still there. I do not know the skin color of the kids related to that
CS> comment, but it might not matter much. I doubt the average American
CS> kid would take well to the attitudes
CS> there even if they were percieved as the 'advantaged' color.

CS> Humm, how to explain that. Most 'African Americans' (many prefer the
CS> term black and thats polite in USA) are actually 'mixed' so are seldom
CS> even close to true African skin color. They culturally are proud of
CS> their heritage and this is a good thing. When they go to Africa
CS> however, they are considered 'white' by the native africans, yet not
CS> white by the Africaans (dutch etc white)
 CS> so fit no where.

GJ> I had wondered about that. An additional SA racial group I have read
GJ> about is the "Cape Coloured", of Indian descent. I don't know how
GJ> they fit into the present society there.

I have no idea. I have only the second hand info from my kid. SA is not a
 good post for USA kids.

GJ> Certainly the US folks I have met and socialised with appear to have
 GJ> no such prejudices.

If they have them, they know they are wrong so stay quiet. Most seem like me,
and have no problems and at worst just the stray confusion on how to ask a
question and be polite at the same time.

It can be wierd. I was talking to a neighor who was talking to a prospective
renter and she described our area as a 'white neighborhood' (she's black) and
handing off some loaned tools to her BIL who is I *think* hispanic. What she
meant was clear though and not bad. It's a sort of quiet place with lots of
kids and parents watching out for kids. I'm not saying a predominatly 'black'
area doesnt watch for the kids, but the terms seem to have shifted?

GJ> Would anybody in S Africa think it was important enough to question a
GJ> person as to his/her ancestry? I would not expect that sort of query
 GJ> in USA.

I think one might ask in SA, but in the USA, it's more just a 'what do you
relate to' sort of thing. More like 'MS Manners'.

 CS> (1/16th) for
CS> me, 1/32nd for her) and the other kid were 'white afrcaans' it would

GJ> As I lived for years in PNG when it was a colony administered by
GJ> Australian "mastas", and continued working there after independence
GJ> removed the divisions, I have seen both sides of the coin. In spite
GJ> of the "privileged" status of whites during the colonial era, life was
GJ> much more pleasant after the differences based on skin colour were
GJ> removed. As expected, the racist-oriented whites and Asians, fearing
GJ> a "night of the long knives" left at Independence in 1975. Of course
GJ> there was no trouble at all; just great parties and celebrations.

Cool <grin>

CS> (Ok,took a break and asked Charlotte. She said 'homestly Mom, never
CS> asked. It's not obvious which she wants to be but her brother is
CS> pretty dark and her other sister pretty light. She's middlin' and it
CS> never came up). I asked if they seemed african or hispanic and she
CS> cant tell. That is very common here.

GJ> That sounds like Darwin, where a large proportion of the locals are
GJ> the product of 100 years of mixing between Anglos, Chinese, Aborigines,
GJ> Filipinos, Timorese, Indonesian and Indians. You just can't tell!

USA: 250 years mixing. No can tell really <g>.

CS> Sure, have quite a few for many things. I do not like lemon grass, so
CS> use calamansi powder in it's place. Have to score me som more of

CS> I just never liked lemon grass much. The rare bite like that which I
CS> want, works better with calamansi. I know the flavor isnt the same,
CS> but I like it better.

GJ> Personally I don't find it very lemony at all. Have you tried the
GJ> green leaves just by themselves, as a flavour item, or as a tea? The
GJ> leaves are tough, and removed after boiling.

Not available here. The grass is but only frozen or dried. The fresh? Had
it,
didnt like it that much.

CS> ... I am Mommy of Borg-no dessert til broccoli is assimilated

 GJ> Does that work? (g)

It did here <g>.
           xxcarol
