 Yeah, that name rings a bell, and that's probably where my
 Gram got the idea. But having tried it, I can say I
 liked it, which is all I need to recommend it. I think I
 read Jarvis's book, and he had a lot more recommendations
 than honey and vinegar, but that was the one I liked.

 I hope you are feeling much better by now. The season of
 needing hot drinks at least has passed in the Northern
 Hemisphere. Whether your drinks are "doing" much for you,
 at least they are hydrating you in some interesting manner!
 I am glad you are being careful with the painkillers.

      Title: BETH'S EGGPLANT SPREAD              [ATCCL]

      Yield: 4 servings

      1 tb Olive oil, extra-virgin.
      1 lg Eggfruit [about 1lb],
           -cubed.]
      1 c  Onion, chopped.
      1 c  Capsicum, seeded and diced.
      2    Garlic cloves,
           -minced.]
      6 oz Tomato paste, salt-free.
    1/3 c  Vinegar, red wine.
      3    Tomatoes, Roma/Italian type,
           -diced.

  !Even ten-year-olds have ideas for healthy cooking! This simple
  appetiser, invented by my niece Beth, may be prepared several days
  before serving. The recipe makes a generous amount, but left overs
  keep well refrigerated for up to a week. You may also use it as a
  sandwich filling on whole wheat pita bread.

  RECIPE: Mix all the ingredients except the tomatoes together in a
  microwave casserole, cover tightly with plastic wrap, and microwave
  on HIGH for 12 minutes. Stir, add tomatoes, and blend.

  Microwave on HIGH for 5 minutes more or until vegetables are tender.

  Cover and chill for several hours or overnight before serving.

  TO SERVE: Bring to room temperature and serve with warmed or toasted
  whole wheat pita bread wedges, or Sweet Potato Chips.
