Now As to your on topic question!

You could consider a more complex carb like rolled oats, where the 
carbs are more complex and the glycemic index is lower. Use 
leaner meat and add a bit of olive oil and/or water will lower
the calories a bit as well. You can also add things like 
chopped frozen spinach (thaw and wring out as much 
water as you can first!), or even hummus (which is mostly
garbanzo beans and tahini) although I'm not sure on the
carb level and glycemic index of the hummus.
What else do you put into your meatballs? 
I tend to bake mine in the oven on a cookie pan
(make sure it has sides high enough to keep the 
fat in the pan when renders out of the meatballs!
I bake mine and then freeze them to use as needed.
