That will be a busy day with Sunday School and church in the morning and
then finishing up the last minute stuff that needs tending to.  We'll be
hitting the post office the day or two with all of the "held back, then
ship to new place" stuff.  Hopefully Sunday will just mean putting last
minute stuff in out luggage.

If I don't get a chance to think of you, here's a birthday cake a couple
of months in advance.  I know, you're diabetic so enjoy the no calorie
version. (G)

QUICK COCOA CAKE

2 cups flour
6 tbps cocoa (1/3cup plus 2 teaspoons or one slightly rounded third of a
cup)
1 tsp salt (can cut back to a couple of shakes; I usually do)
1 tsp baking soda
1 1/2 cup sugar

3/4 cup melted shortening (cooking oil)
2 eggs
1 cup water
1 tsp vanilla

Sift dry ingredients into a bowl.  Add remaining ingredients, mix well.
Pour into a greased and floured  (hint: flour with cocoa for more of a
chocolate taste) 13" x 9" pan or two 9" round greased and floured pans.
Bake at 350 degrees for 25-30 minutes, depending on pan size.  Let cool
briefly (5 minutes), then turn onto wire racks and remove cake pans.  I
will usualy use a sheet of wax paper in the bottom of my cake pan, cut
to size.  In this case, lightly spray the bottom of your pan with non
stick spray (just enough to make the wax paper stick), put in the wax
paper and smooth into place, then spray with non stick spray again and
flour.  Remove wax paper after turning onto cooling racks.  When cake is
cool, frost with your favorite buttercream icing.

The original recipe was in a home made cook book asembled by my mother
(Naomi Weiss), probably in the mid to late 1940s with no accreditation.
I've made this many times, first, while as a child and then in my own
home, tweaking things slightly so that it's a bit easier to understand
and make.
