Here is a recipe for a guy who likes to scramble eggs in his espresso
machine!

And it's simple enough for an eat to prepare: "Combine wet ingredients,
combine dry ingredients, mix."

     Title: Pastorios' Microwave Pancakes

  1 1/4 c  milk
    1/3 c  heavy cream
    1/4 c  vegetable oil (could use
           melted butter)
      2 c  AP flour
      4 ts baking powder
    1/3 c  sugar
      1 ts salt
  1 1/2 c  fresh blueberries

I made blueberry pancakes this morning but did something with the batter
that I've never seen done before.

Combine wet ingredients, combine dry ingredients, mix the two together
and add blueberries. Cook per your usual for pancakes. They were
wonderful. We ate a lot of them and had 2 cups of batter with
blueberries left over. I had to take care of some things and left the
batter in a bowl on the counter until late this afternoon.

While cleaning up, I saw all that batter and wondered if I should make
more pancakes. Then I wondered what would happen to pancake batter in
the microwave. I got out a 7-inch glass plate with a lip around the edge
and sprayed it with pan release. Poured the two cups of batter (with a
goodly amount of blueberries in it) into the plate and put it into the
mike. I ran it for a minute during which time nothing much appeared to
happen. I checked it and found that it was hot, but not cooked. Ran it
for another minute and saw the edges begin to puff a bit. The center was
starting to firm. Another minute and a half and it was cooked (YMMV).

Firm, dry surface and, strange to behold, the blueberries turned red
(alkaline reaction to the blue anthocyanins in the berries). The cake
slid in the plate, so I saw that it wasn't welded on. Took a dinner
plate and inverted it over the original plate and flipped the whole
assemblage over. The cake slowly slid out of the cooking plate. I
touched it and found it cooked, slightly puffed and nicely firm. The
berries perfumed the whole kitchen. But it was zombie-white like Darth
Vader's face and not too appetizing. I sprinkled some white sugar on it
and passed it under the broiler to caramelize the surface. It melted the
sugar and browned it slightly so we ended up with a thin crust as on a
creme brulee. It was hotter than Mt St Helen's, so we waited about 10
minutes for it to cool. The berries were still lava-hot after the wait,
and showed that it would be very forgiving in serving.

We then had a 7-inch round, 1 1/2-inch high browned blueberry, um, nuke
cake. It was wonderful, lightly puffed, tasty, but incomplete. For
dessert, it should be sweeter. For breakfast, more savory. So I thought.

Then the secondary experiments started. I spread a bit of the blueberry
preserves I made last week over top. Glorious. Sprinkled some peach
schnapps over another section. Good, not great. The Kid and I did the
testing and decided that they could be made in individual custard cups,
unmolded and garnished with sweetened, flavored whipped cream. Or
decorated with vanilla ice cream or, if made with, say, cherries, graced
with Breyer's cherry-vanilla ice cream, this week's fave from the
supermarket.

I decided to include The Kid in the recipe name, so it's Pastorios'
Blueberry Nuke Cakes. She acted as my advisor and co-tester. Brain
stormed with me as we ate the whole thing, breathing through our mouths
to cool it off. And, I must confess to speaking with our mouths full,
blueberries in full display, in the excitement of the moment. Then I
filled the dishwasher while she went off to contemplate the fact that
school starts for her bright and early Monday morning. And I can sleep
in.
