I think you may have hit the nail on the head - personal
responsibility and interest rather than accounting ... but
the Ahold companies have mostly been predatory even before
they were taken over - Stop & Shop, but more notably Giant
Food.

Maybe, but it's a competition that has lasted over 30 years
and that has survived all sorts of industry shakeup. Some
hypotheses have included heavy competition from local seafood,
but that doesn't seem to obtain any more, and state subsidy, but
there's no evidence of that. And there's the other possibility
that New Englanders are just too darned cheap.

I've found the Weggie's butchershop quality to be fairly
high, and the selection worth a few cents more a pound
just for the benefit of seeing cuts that the others don't
offer at all.

bookstore.

Beef stew
cat: main
Yield: 100 servings

30 lb beef, diced, thawed
1 lb flour
3 oz salt
1/2 oz pepper, black
1 ga water, hot
6 1/2 lb carrots, quartered
2 ga water, boiling
10 lb potatoes, quartered
4 lb onions, peeled and coarsely chopped
2 lb peas, frozen

Dredge beef in mixture of flour, salt, and pepper. Shake off excess.

Place equal quantity of beef in each of several roasting pans. Cook
in the oven for 1 hr or until browned.

Add 2 qt water to each pan. Cover. Cook 2 hr or until tender.

Cook carrots in water for 15 min. Add potatoes and onions. Cook 20 min.

Add peas. Cook 20 min. or until tender. Drain.

Add vegetables to beef in each pan, stir. Heat to serving temperature.
