If we had to "eat with the seasons" more, people would have
more of an appreciation for the food chain.  They would 
understand that asparagus is an early spring vegetable, and
veal is best field-raised and culled in June, and chickens
taste better when they can grow naturally scratching in a yard
instead of confined 4 to a cage with cut beaks and a constant
stream of growth hormones to get 5-pound birds to market in 
8 weeks.

But you're right: No one cares.  That's why Enfield is down to
two working dairies now, from 12 when I was a kid; why we've got
5000 sf houses on 4 acre lots of overfertilized lawn; or $15,000-
a-slip marinas instead of a fishing fleet; or golf courses instead
of orchards.

After a hard day at work I'd rather have a thick steak. [g]

Because I sure as hell can't afford osso bucco.  Have you seen
the price of shanks?  $5/lb for beef, $8/lb for veal.
