I might have been served an in-flight brekkers, I forget now,
as I generally don't eat breakfast, but still I had this $15
voucher that had to be burnt up within 24 hours of issue. WWGJD?

My status guarantees me an empty seat next to me unless
all other seats on the plane are full. The fact that I am
a high-tier flyer gives me, how you call it, social capital
that I can spend for a modicum of privacy even in peasant class.
Right now I am sitting on a somewhat full plane with empties on
either side.

More like, except he kept looking furtively about himself and
praying using exaggerated gestures (remember, he kept elbowing
me in the ribs) during the flight.

I've had a very similar dish, only here in the States the
restaurants tend to overmarinate or use tenderizer, not
trusting the talents of the sous-sous-sous-chefs whom they
hire for $8 an hour.

There are those of us who would welcome that solution for
all Land Cruisers.

STUFFED PIG'S STOMACH (HOG MAW)
cat: offal, main
SERVES: 6 to 8

1 lg pig's stomach, well cleaned of all fat
1 lb fresh link sausage, cut into 1/2" slices
1 lb smoked linked sausage, cut into 1/2" slices
6-8 md potatoes, peeled and cut into 1/2" cubes
2 md onions, coarsely chopped
2 Tb fresh parsley, chopped (or to taste)
Salt and pepper to taste (go easy on salt
- depending on sausage)
3 Tb flour, mixed with 3 Tb cool water
- until smooth to make a paste (slurry)

Mix together sausages, potatoes and onions. Add parsley,
salt, and pepper. Sew small opened end of stomach with
cooking twine to close. Stuff sausage mixture into stomach,
pressing well with each addition. Stomach has a lot of
elasticity and will stretch to almost any size necessary.
When all stuffing has been placed inside, close open end
with twine.

Place stuffed stomach in shallow roasting pan. Roast in
preheated 350F oven until potatoes are tender (check by
inserting thin sharp knife into middle) about 2 hr. Baste
about every 20 min with water or pan juices.

Remove stomach from roasting pan. Drain off most of the
fat. Make the flour paste in a small bowl. Place pan on
burner on top of stove. Add 2 c water and bring to a boil,
scraping up all of the browned bits in the bottom of the
pan. Gradually add flour paste, whisking rapidly and
constantly, until the gravy thickens.

To serve, slice into 1" slices. Pass gravy separately.

Notes: Sausages in various regions of the world are
seasoned different. You will have to use your own tastes
when purchasing.
