It's getting really nasty here due to the prolonged drought. We
have had only 1mm of rain for the whole of October. Oct, Nov and
Dec are usually the months when my lawn grows like crazy, due to
the extra sunshine, but the ground is so dry it has all dried
off.

That sounds lovely!

I have a bottle of apple wine that someone gave me several years
ago. It has a little packet of spices tied to its neck, and a
recipe for mulled wine. One of these days I shall make it up....

What is the difference between cider and apple wine? I have it on
the authority of someone who makes both that apple wine uses the
whole apple, while cider uses only the juice.

This is more suited to our weather ;-)

     Title: Fresh Mint Ice Cream
Categories: dessert, ice cream
  Servings: 6

      1 c  sugar- castor
      1 c  water
      2 c  herb- fresh mint leaves -- packed
      1 c  whipping cream
    1/4 c  cider vinegar

In a small saucepan, combine sugar and water. Cook over medium heat for 2
- 3 minutes, until sugar dissolves. Bring to a boil over high heat; boil
for 2 minutes. Remove saucepan from heat; let cool for 10 minutes. In a
food processor or blender, combine sugar syrup and mint leaves; process
until mint is finely chopped. Transfer to a bowl, refrigerate, covered,
until chilled. Strain mixture through a sieve, pressing on mint leaves to
extract as much liquid as possible; discard mint leaves.

Ice cream maker method: Stir cream and vinegar into syrup (mixture may
look curdled). Freeze in an ice cream maker according to manufacturer's

No ice cream maker method: Whip cream until it holds stiff peaks; fold
into syrup along with the vinegar. Spoon into shallow pan; freeze until
firm.
