I am having a lively discussion of this topic on roadfood.com ... here 
is what I answered the to same point(s) you raise ...

Can't go back to beef fat and skip the trans-fats. Trans fat is a 
naturally occurring component in the milk and body fat of ruminants 
(such as cows and sheep) at a level of 2-5% of total fat. They originate 
in the rumens of these animals.

I don't agree that Mickey D's (or any other burger snatcher joint) need 
warn customers of animal content. Not as a warning. Sure, post the 
ingredients - but, it should be up to the consumer to perform due 
diligence. Even in our increasingly litigious society.

See, you can't always have it both ways. McDucks used to use tallow to 
fry their taters ... and they tasted great. But, in an early spate of 
political correctness they switched to vegetable shortening (Kurba brand 
IIRC) and surreptitiously added some essence of beef fat to the veggie 
stuff to get at least part of the great taste back into their fries.

I don't see that the Sign of the Clown would lose all that much business 
in opposition to what they would gain by reintroducing really great 
tasting fries again. Jews make up less than 2% (actually 1.7% and pretty 
static) of our population. Strictly observant Jews less than 25% of that 
2%. Muslims who keep Halal will not eat in a McDuck's because they also 
process pork in the same facility (McMuffins with Canadian bacon or 
Sausage, McRibs, etc.) And there are even less strict vegans (an odd 
religion) than there are Kashrut Jews or even 7th Day Adventists. 
And what would a vegan be doing in in a dump whose most memorable bit of 
advertising goes "Two ALL BEEF patties, special sauce ... "

Been my experience that most people "worst case" things. I'd bet (were I 
in charge) that advertising NO TRANS FATS would bring in more business 
than would be lost to the alarmists and Food Kops - and the dietary 
restriction folks.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Pumpkin Salad - GF
 Categories: Squash, Salads, Fruits
      Yield: 6 Servings
 
      4 sl Bacon; chopped
  2 1/4 lb Pumpkin; peeled, cubed
    3/4 c  Walnuts; chopped
      1    Apple; chopped
      3    Shallots; chopped
      1    Rib celery; chopped
    1/2 c  Mayonnaise
    1/2 ts Nutmeg; ground
 
  Render bacon in skillet until crisp; drain; cool.
  
  Combine pumpkin and enough water to cover in saucepan.
  Cook over medium heat until tender. Drain. Cool.
  
  Combine all ingredients in bowl. Mix well.
  
  Yields: 6 servings
