It has a lot to do with the cancer causing potential of trans-fats. 
Trans fats, short for trans fatty acids, are bad-bad fats. They are the 
new boogeyman of the table, a fat so insidiously unhealthy that one 
Harvard scientist calls it "metabolic poison." Usually used in cooking 
oils to stabilize them, trans fats clog arteries by pumping up "bad" 
cholesterol and pushing down "good" cholesterol.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Reatha Faye's Squash Ritz Casserole
 Categories: Squash, Dairy, Casserole
      Yield: 6 servings
 
      1 lb Yellow squash; in rounds
     23    Ritz crackers; crumbled
      1 lg Onion; chopped
    1/2 c  Celery; chopped
    1/2 c  Sharp cheddar; grated
    1/4 c  Green bell pepper; chopped
           Fine
      2 lg Eggs; beaten
      1 c  Sweet milk
    1/2 c  Evaporated milk
    1/4 ts Salt
      2 tb Butter; melted
 
  Tenderise squash in a little bit of water, drain and mash. Mix
  all the other ingredients in with the squash. Butter a casserole
  and put the squash mixture in it. Bake at 350oF for 30 minutes
  or so. When done it should be kind of like a pudding.
  
  Serves 6
