jw-> Usage may vary, but to me, cider is the cloudy juice from pressed

My Grampa Jack Meriweather made what he called Apple Brandy by freezing
cider several times, and removing the ice, thus concentrating the cider and
alcohol into a sort of brandy.   It is more generally referred to as
Applejack.   

I take the liberty of quoting from Answer.com, to give a clear description
of the process:

"Applejack is a strong alcoholic beverage made in North America by
concentrating cider, either by the traditional method of "freeze
distillation", or by true evaporative distillation. In traditional freeze
distillation, a barrel of cider is left outside during the winter. When the
temperature is low enough, the water in the cider starts to freeze. If the
ice is removed, the (now more concentrated) alcoholic solution is left
behind in the barrel. If the process is repeated often enough, and the
temperature is low enough, the alcohol concentration is raised to 30-40%
alcohol. In freeze distillation, hazardous concentrations of methanol and
fusel oil may develop. These toxins can be separated when regular, heat
distillation is performed. Home production of applejack is illegal in most
countries."

Grampa Jack never talked about any poisonous side products, so he was
probably blissfully unaware.   

He is, by the way, the alcoholic on my Mother's side who made his own beer
in the cellar in big vats.  When I was a kid I loved the smell of
fermentation in his cellar, but as I grew up I took after one of his sons,
Bill, who never drank at all.  I didn't drink until I was out of college,
and stuck pretty much to wine.  The last ten years or so I have enjoyed
scotch and water, and bourbon and water on the occasion.   Beer has never
appealed to me a lot, although I can really enjoy a cold beer now and
then..... especially in the summer.  Funny though, I never cottoned up to
taste comparisons or any awareness of the different beers.  Sadly, perhaps,
beer is beer to me.

Grampa Jack was a rather benign alcoholic, because he always brought home
his paycheck, and never was drunk outside the house.   My Father and his
brother were not such benign alcoholics.  [g]
