He did want bigger ones, though we got them at the
Giant Food on the few occasions we got them - my father
was and is not a gardener. And when I lived in Salem,
we were sort of obligated to carve a big pumpkin every
year at Hallowe'en time, just because everyone in the
darned city had all the trappings that you'd expect of
a city that has an Official Witch.

Latterly I've begun to find the pronounced musky odor
of winter squashes somewhat tiresome, although I still
do eat modest quantities of them. But you know what?
This morning, we went to a diner for a very late dinner,
and one of Carol's side dishes was in fact stewed
zucchini; I tried it, and it tasted sort of like Campbell's
gumbo soup - it was beyond watery, and it had been cooked
until all the zucchininess had pretty much left - it was
really more like okra by this time; so I was cajoled into
eating it, with Carol crooning "good for you" every time
I hesitated taking a mouthful.

I've seen a variation only between the poles of
light whitish-orange to deep orange. Never seen
one that was, say, blue inside, or else I'd be
praising it to the skies. I was most disappointed
the first time I saw the inside of a Blue Hubbard.

      Title: Stuffed Acorn Squash
 Categories: Low-cal, Vegetables, Meats, Microwave
   Servings:  2

           Sm Acorn Squash (1 lb)              6 oz Lean ground Pork or Turkey
    1/4 c  Chopped Celery                    1/4 c  Chopped Onion
    1/4 ts Salt                              1/4 ts Curry powder
    1/4 ts Cinnamon                          1/2 c  Unsweetened Applesauce
           Slice raisin bread, cubed

   Spray a 10x6x2 baking dish with Pam. Halve squash; discard seeds. Place
  squash, cut side down, in baking dish. Bake, uncovered, in 350 deg F oven
  50 minutes.
   Meanwhile, for stuffing, in a skillet cook turkey, celery, and onion till
  meat is no longer pink and vegetables are tender. Drain off fat. Stir in
  salt, curry powder, and cinnamon; cook 1 minute more. Stir in applesauce
  and bread cubes.
   Turn squash cut side up in dish. Place stuffing in squash halves. Bake
  uncovered, 20 minutes more.

  MICROWAVE Directions:
   Place squash, cut side down in a 10x6x2" microwave-safe baking dish.
  Micro-cook on 100% power (high) for 6 1/2-8 1/2 minutes or till tender. Set
  aside. In a 1 qt casserole cook turkey, celery, and onion, covered, on high
  for 2-3 minutes or till turkey is no longer pink, stirring twice. Drain.
  Stir in curry powder, salt, and cinnamon. Cook 30 seconds more. Stir in
  applesauce and bread cubes. Spoon into squash halves. Cook, uncovered, on
  high for 3-4 minutes or till heated through.
