On 11-29-06 MICHAEL LOO Scribbled to DAVE DRUM about visitors 586

ML> ML>up the truck so he and Connie can drive it back in the
ML> ML>spring - so don't expect too much participation from him).
ML> ML>Oh, also, he says he had a great time visiting with Uncle
ML> ML>Dirty Dave on his way across the heartland.

ML> DD> We didn't go out to eat, though. Mostly spent a couple days just
ML> DD> sitting around shooting the errrrrrmmmmm breeze. Good times,
ML> DD> though.

ML>Not a big surprise - you're both good at that. So what did
ML>you feed him? I'd have thought you'd take him out for a
ML>pony shoe or a bowl of red or something.

Didn't dine him - or wine him at all. When I first showed up I had a jug
of pretty good wine (Baobab Merlot '03). Bill mentioned that he and
Connie didn't really like wine and just usually went along with the
program when it was ordered for them at a meal or something. So, I
popped the vino back in the vehicle and that was that. We just spent the
two day visit in the great hall of his tow along and batted the breeze.

ML> DD> No Buick I am aware of could get 50 mpg on its best day - even
ML> DD> out the 12th story window if the Dixie Hotel.

ML>Just reporting what I read. Might not have been a Buick, but
ML>still some big boatish thing of that ilk.

Just as well. I think they tore down the Dixie Hotel. Or renamed it
"Hot l Baltimore" or something. I've seen all sorts of outlandish claims
of carburetors/fuel injectors/miracle engines that got some magickal
number of miles per gallon of propellant. And the pitchmen for those may
have engendered a suspension of disbelief in the minds of the easily
amused. But, they never did manage to repeal the laws of physics.

There was a carburetor once which managed to deliver respectable
horsepower figures and amazing fuel mileage at the same time. But, it
was also amazingly "fiddly", requiring prodigious efforts and amounts of
time to keep it "in tune". Hardly the sort of thing any prudent auto
company would sell Aunt Maude for her grocery getter station wagon.

      Title: Cajun Shrimp Mirliton Casserole
 Categories: Seafood, Cajun, Squash
      Yield: 8 servings

7 md Mirliton (chayotes; 5 lb)
      2 md Onions; chopped
      2 Green bell peppers; chopped
    1/4 lb Unsalted butter
      3 lg Garlic cloves; minced
     24 Saltines; finely ground (3/4
           -cup)
      2 lb Large shrimp; shelled,
           -deveined, cut in 1/2"
           -pieces
    1/4 ts Cayenne, or more
2 tb Fine dry bread crumbs

This rich, savory dish (pronounced shrimp mah-lih-tone)
is pure Cajun comfort food. In Louisiana it's often served
as a side dish; it also works as a first course.

Active time: 1 1/2 hr Start to finish: 1 3/4 hr

Simmer mirlitons in water to cover by 2 inches in an 8-qt
pot, partially covered, until very tender, about 1 hour.
Drain mirlitons, then halve and peel, discarding pits.
Coarsely chop in a food processor.

  Preheat oven to 400°F.

Cook onions and bell peppers in 6 tablespoons butter in a
6 to 7 quart wide heavy pot over moderately low heat,
stirring occasionally, until softened. Add garlic and cook,
stirring, 1 minute. Add mirlitons and cook, stirring
occasionally, until most of liquid is evaporated, about 5
minutes. (Do not let vegetables brown.) Stir in cracker
crumbs, shrimp, cayenne, and salt and pepper to taste and
cook, stirring, 1 minute. Spoon into a shallow 3 quart
baking dish and sprinkle with bread crumbs. Dot with
remaining 2 tablespoons butter and bake in upper third of
oven until crumbs are just golden, 12 to 15 minutes.

  Serves 8 to 10
