CS> Would have been lovely but no, we never got that far south. Indonesia
 CS> and no port visits.

Pity no port visits. You could have enjoyed some good food there.

CS> stage since we are down to just frozen and canned stuff mostly <grin>.
GJ> Poor you! Better hang a line over the side.

CS> Some did just that! Had a few good fresh meals from that. They fish
CS> off the fantail out of the well-deck.

Good to see that you have some people with initiative. What sort of
fish did they get? When I have been on a ship where crew did that
sort of thing along the PNG coast they usually got a variety of large
fish known as a dolphin (not to be confused with the mammal). It
certainly tasted good!

[Searching for some info on that fish..... Wow! Success! Guess who?]

      Title: Hawaii Fish Market

For those new to the Islands, shopping for fish can be 'interesting'
until you know the local names. While not all of these are actually
'Hawaiian' these are the names to expect. (Some stores add the
mainlander names too but not many):

AHI- Yellowfin tuna, Albacore Tuna, Big-Eye Tuna. When it's
Albacore, it may also be called 'ahipalaha or tombo ahi'. Up to 300
  lbs.

AKU and KAWAKAWA- Skip-jack and wavy-back skip-jack tuna. Kawakawa
isnt really Aku but tends to be lumped in with the name due to flavor
being almost identical athough the fat content is a bit higher. 20
  lbs in summer.

AMA'AMA- Mullet. Known world-wide, the Hawaii version are normally
1.5 to 2 lbs and sold whole (cleaned).

A'U- Pacific Blue Marlin, Striped Marlin, Black Marlin, spearfish and
  sailfish. Size varies widely.

HAPU'UPU'U- Sea Bass. In Hawaii, expect 5-15 lbs.

KAKU- Great Barracuda, in Hawaii, over 100 lbs is normal out a
distance but the smaller ones are more often caught (10-30 lbs).
Since it's not often eaten elsewhere, a tip. Dont skin or scale it
til after cooking. The flesh is very delicate until after cooking. If
however you want one that will flake to oblivion in a chowder, this
is *perfect*. Skin it in that case. Normally, it's served with the
skin on the fillets and forked loose.

KAMANU- Rainbow Runner. Not often seen so a tip. Watch for small
bones as this one is very hard to fillet without leaving a few. 2-6
lbs normally but can hit 30 in Hawaii.

MAHIMAHI- Dolphin Fish (No, not flipper the mammal type
dolpin).Averages 15-25 lbs. Name confusion is possible as there are
other fish with this name in other parts of the world. Sometimes
  just called 'Mahi'.

NENUE- Sea Chub. 2-5 lbs. If you like perch, this is a local ocean
fish that will match the flavor well. Tip, watch when cleaning to
not break the innerds as this is a seaweed eater. Fortunately, in
Hawaii almost all fish are sold 'pre-cleaned'. If at the pier, this
one may have been cleaned already. The innerds arent poisonous, just
nasty smelling. If you clean one, do it under running water and then
  no problem.

OAMA and HAHALALU- Young Goat Fish and Young Big-eyed Scad. Fingerfish
sized and often eaten whole. The 'sardine of Hawaii'. Normally
  cleaned then panfried.

O'IO- Bonefish. 1-5 lbs. This is a favorite in Hawaii but almost no
other place bothers. In Hawaii the fish is cleaned then scraped from
the bones. It will look like 'fish paste' and is fixed in hundreds of
ways, many of them like mainlanders would use ground beef.

ONO- Wahoo. 20-30 lbs. Unlike others of the mackeral family, this
one has sweet white meat and is often found in Sashimi, alternated
with AHI. Be especially careful about overcooking this one. ONO=GOOD
  in Hawaii.

OPAKAPAKA, ONAGA, UKU- Pink Snapper, Red Snapper, and Grey Snapper.
  Ranges from 3-10 lbs.

OPELU and AKULE- Mackerel Scad and Big-eyed Scad. 12oz to 2lb. Watch
for bones, often smoked (and the bones fall away easily then).

TA'APE- Blue Lined Snapper. 1/2-1lb. Small but very colorful, cooks
like other snappers but due to size, often panfried.

UHU- Parrotfish. 2-5 lbs, yes, the same as might be in your
saltwater home fish tank! One of the best in Hawaii, but a tip. Dont
puncture the stomach when cleaning as it's full of sand. Rinse
really well if you do by accident.

ULUA and PAPIO- Giant Trevally and Trevally under 10 lbs. ULUA has
been caught at 191 lbs. 100 common. Actually the same fish in the
way a great dane and a miniture schnauzer are both dogs.

WEKE, MOANO, KUMU, and MALU- Goatfish family. 8oz-2lbs. WEKE'ULA is
a version that grows to 6 lbs. Caution note, though extremely rare,
some people have been known to have an allergic reaction in the form
  of tingly numb lips.

From Shirley Rizzuto's *excellent* book on fish dishes of the pacific.
