I got an email from a friend in West Vancouver and he said they didn't get it 
as bad as they expected to have it...but it was plenty bad anyway. 
We still have large areas without power, and the temps have dropped below 
freezing so we expect to hear about frozen pipes and flooded homes in the 
news soon...
To the many participants who were out here for the last NorthWet picnic, we 
went over to my Friends the McDonalds (who hosted the red wine tasting at 
their home) for the annual Cookie bake day..And the McDonalds are without 
Power still! So what did they do? Three Generators AND a propane heating 
unit and the party went on! Mary served as barmistriss and I'll attest that 
she makes a MIGHTY good Gin Bloody Mary! Annie and I made our famous 
twice baked cookies  and as usual they were one of the most popular cookies 
there! 


Hap and Anne’s Twice-Baked Cookies  (biscotti)

With a heavy spoon beat 4 eggs with 1 ½ cups of sugar until well mixed.  Do 
not use a mixer as it adds too much air.  Stir in ¾ cup ( 3/8 lb.)
melted butter, 2 tsp. vanilla, 1 tsp. each of anise and black-walnut flavoring,

and 1 cup of chopped walnuts.  In a separate bowl, mix 5 cups flour with 
4 1/2 tsp. baking powder.  Gradually, add dry ingredients to creamy mixture, 
blending well using the heavy spoon.  (It’s a good arm and wrist workout. 
Anne often finishes the last addition of flour with her hands.)
Must be a consistency easy to handle, but not so dry it crumbles.  
On a floured board divide into 8 balls.  Roll each into a 14 inch rope. We 
flatten them slightly.  Place on greased baking sheet.  Bake at 325 degrees 
for 20 minutes (until bottoms are golden brown).  Allow ropes to cool on pan, 
then cut in ½ to ¾ inch diagonal slices.  Transfer to a holding plate until all

ropes have gone through the first baking. Then, tipping slices to cut sides, 
put them back on the cookie sheet.  Bake at 375 degrees until lightly 
toasted, about 15 min.  Cool.
 Store in air-tight container at room temperature for up to a month 
or freeze. One batch makes about 12 dozen cookies.
 These are delicious just as they are with a cup of tea, coffee, or 
hot cocoa.  Cooled cookies can also be drizzled with or dipped in melted dark 
chocolate.  YUM!
