Habbies are certainly hot enough...but I don't like the slightly overripe 
apricoty flavor of them as much...so I'd alos use several less hot but better 
tasting ones as well!

Well I DO like the ginger flavor so my recipe has quite a goodly bit in it
(grin)

Hap's Teriaki Sauce
1/2 cup low sodium soy sauce
1/2 cup aji Mirin sweet rice cooking wine
2 TBS brown sugar ( or more to suit your tastes )
1 cup stock (chicken, fish, or even dashi if you wish)
2 cloves garlic minced very fine or paste
about a 2" bit of fresh ginger diced as fine as you can get it
(I run mine through  a mini food processor after I dice it)
Combine all ingredients in a saucepan and bring to a boil, lower to a simmer 
and simmer for about 10 minutes. cool and put into jars will last a good week 
or more easliy in the fridge....it never lasts that long here! 
The nice thing is that you can add a bit of heat to it if you wish, or more or 
less sugar according to your tastes, or more or less garlic! Like you, I tend
to 
be a "tweaker" so I usually adjust the recipe to how I am feeling that 
particular day as to sweetness, and garlic....I never add the heat because 
Anne is a TRUE pepper wuss and in almost 35 years of marriage I have not 
been able to budge her in the direction of any spiceyness...sigh though I do 
keep trying (grin).

As you can see it's a rather simple recipe and much better than storebought 
(in my opinion) and less salty as well!

To me they have a decidedly strawberry like taste, more tart however and 
with almost watermelon undertones as well.
