I always thought the reason you had switches on your electric
outlets is that you had direct current, and the extra electricity
would form little glowing pools on the floor if you didn't turn the
switch off. Our electricity, being alternating current, doesn't
know whether it's coming or going so never has a chance to spill
onto the floor.

Complicated by the fact that we have two distinct kinds of sesame
oil for sale in the States - the nice toasty brown real stuff and
the cold-pressed (I wanted to say clod-pressed) tasteless stuff,
both available in 100% versions. The latter is good for frying;
the former for flavoring.

Martin Yan's kung pao sauce
cat: cooking sauce
yield: 1 scant cup

1/2 c regular soy sauce
2 Tb rice vinegar (or 1 1/2 T regular)
1 Tb sugar
1 Tb scallion tops, minced
2 ts hot chili oil
1/2 Tb sesame oil
1/4 ts Szechwan peppercorn, toasted and ground
2 garlic cloves, minced

Combine all ingredients in saucepan. Bring to a boil, then reduce
heat to medium and cook 2 min. Cool before using.
