I on the other hand am the confluence of two fairly pure and
fairly eminent lines. Not that that has done me or anyone else
any good.

Choo yourself. I'm okay with train sets but won't cross the
street to see one. Last summer, my friends' friends wanted to
show my honorary nephew a big old train set, and I wouldn't
cross the street until I was begged to do so (Emerson feeling
less than empowered to do so by himself, despite his being
almost in double digits - he's extremely cautious, which is
fine, as the family home is on a stretch of road where motorists
often travel at an excessive rate of speed, and there's always
the danger that someone will get eggplanted one day).

Grilled Summer Vegetable Sandwiches With Basil Mayonnaise
cat: veg, sandwich
serves: 6

1 eggplant (about 3/4 pound), cut into 1/4" slices
1 medium-sized zucchini, cut into 1/4" slices
1 yellow squash, cut into 1/4" slices
1 fennel bulb, cut into 1/4" slices (cut through the
- root end to stay intact)
1 lg tomato (not too soft), cut into 1/4" slices
1 lg red onion, peeled, cut into 1/4" slices
1 T olive oil
6 5" pieces of of French bread (baguettes), each piece split
2 c basil leaves, rinsed and trimmed
Basil Mayonnaise (recipe follows)

Prepare a charcoal or gas grill. Brush oil lightly over vegetables.
Grill vegetables, in batches, until lightly charred and tender;
fennel will take 4 to 5 min per side, eggplant, zucchini, squash
and onion 2 to 3 min per side, and tomatoes 1 to 2 min per side.

Grill bread for 1 to 2 min per side, or until lightly browned.

To assemble sandwiches, spread each slice of bread with 1 T
basil mayonnaise and layer with vegetables and basil leaves.

Basil Mayonnaise
cat: condiment
Yield: 3/4 c, serves 4

2 c basil leaves, rinsed and trimmed
1 cl garlic, crushed
1/2 c non-fat mayonnaise [M says NONFAT??? no!]
;s&p
2 T freshly squeezed lemon juice, or to taste

Puree basil and garlic. Add mayonnaise and process until
smooth and creamy, about 1 min. Adjust seasoning to taste
with salt, pepper and lemon juice.

Why does the one recipe serve 6 and the other serve 4?
Don't ask me, ask the Cooking Light Magazine people, who
came up with these ideas.
