      Title: Chocolate Mousse Cake Chokladmoussetarta

    100 g  Almonds
      2    Bitter almonds
    200 g  Almond paste
      2    Eggs
           Grated rind of 1 orange
           Chocolate mousse:
    250 g  Dark chocolate
      3 dl Whipping cream
      2 tb Icing (confectioner's)
           Sugar
      2    Egg yolks
 
  Finely chop the almonds in a food processor. Crumble down the almond
  paste and add egg and grated orange rind. Mix to a smooth batter.
  "Dress" a round baking dish with baking paper. Pour in the almond
  batter and bake in 200 C/400 F for about 20 minutes. Leave to cool.
  
  Break the chocolate in pieces and put them in a bowl. Melt it in a
  waterbath. Beat the cream. Beat together icing sugar and egg yolks
  and stir down the cream. Last, add the melted chocolate and blend
  well.
  
  Take up the almond cake bottom. Dress the dish with plastic foil and
  put the cake back. Spread the chocolate mousse over it and cover with
  plastic foil. Put in the fridge for about 6 hours. Take it out about
      1/2    hour before serving.
  
  You can serve this lovely cake with a Sauce Melba: Purée 1 package
  frozen raspberries to a smooth sauce and pour it up on small plates.
  Put one piece of cake on each plate.

      Title: Chocolate Walnut Cake Choklad- Och Valnötskaka

      4 oz Margarine or butter
    2/3 c  Good-quality dark chocolate
    1/2 c  Walnuts
      3    Eggs
  1 1/4 c  Sugar
      1 ts Vanilla sugar
      1 c  Flour
      2 tb Cocoa powder
      1 ts Baking powder
    1/4 c  Strong, cold coffee
           Decoration:
           Walnuts,
           Chopped chocolate
 
  Heat the oven to 350F. Grease and flour an oblong baking dish,
  capacity about 8 cups.
  
  Melt the fat and set aside to cool. Coarsely chop the chocolate and
  walnuts. Beat eggs, sugar and vanilla sugar until white and fluffy.
  Sift in the dry ingredients, add the cold coffee and the chocolate nut
  mixture. Blend gently. Last, fold in the lukewarm fat and gently stir
  the batter until smooth.
  
  Pour in the baking dish and bake in the lower part of the oven for 45
  ~ 50 minutes. Let the freshly baked cake cool for a while in the dish
  before gently unmolding. Decorate with walnuts and chopped chocolate.
