It's the same thing here in New York State.. there are decent places and some
horrid ones..

I believe the place is named Atria.  All in all she likes it there, and
certainly likes the warm weather.  The food is a problem though.. and you'd
think that they'd have diets to accomodate people with common problems like
diabetes.

That's neat.  In our family, no one called the doctor til they'd talked to Mom
and Dad first.. they were both that sharp in the medical field.  While my dad
wasn't a doctor, perhaps you know, or xxCarol can tell you the kind of training
the corpmen get in the navy.. it surpised me talking to her about that, that
the navy still does that kind of training as a standard.. I'd thought the only
reason he was trainded to do surgeries and performed them on board the USS
Quincy, was because of WWII. Talking to my mom this week was a little rough
too.. It was Dad's birthday on the 25th.. Mom found a copy of tape that Dad had
made years ago describing the sinking of the Quincy.. She's going to send me
copy (soon I hope).

Hmm.. these sound good :)  We love eating "regular" potato pancakes with tons
of applesauce .. this could be an interesting change.

======Roasted Tarragon Potatoes======
Preheat oven to 350°
Serves 4-6

6 medium potatoes
2 Tablespoons tarragon
Olive Oil
Salt and pepper

Cut each potato in half lengthwise, then slice each half about 1/2 inch thick.
Put the potato slices in a 13"x9" pan, and drizzle olive oil generously over
them.  Sprinkle the tarragon over all.  Salt and pepper the potatoes
generously. Turn the potatoes until well coated with tarragon, salt, pepper and
olive oil. Roast in preheated oven for 1/2 hour.
